Yesterday was our last Friday in this apartment, and also most likely the last time I will babysit my little cousins here before we move next week. I decided to make the day a little special by giving them each a little cup of coffee (our entire family are addicts from birth) and baking some biscotti 🙂



Ingredients:
(makes about 2 dozen)

6 TBS butter, softened
2/3 C white sugar
2 oz melted dark chocolate
1 tsp baking powder
2 eggs
1 tsp vanilla extract
2 C all-purpose flour
3/4 cup semisweet chocolate chips (or chopped chocolate bar)

Directions

Preheat oven to 375 F then cream butter and sugar in a large mixing bowl until light and fluffy. Beat in the eggs one at a time then mix in the vanilla extract and slightly cooled melted chocolate. Once combined, add flour and baking powder, then mix and add the chocolate chips. Chill dough for about 10 minutes.

Divide dough in half and roll each half into a 10 inch long log. Place each log on a greased cookie sheet and flatten slightly with your hands. Bake for about 20 minutes then cool on cookie sheet for 5 minutes before transferring to a wire rack to cool for 15 more minutes.

Once cool enough to handle, cut each loaf into 1/2 inch wide diagonal slices and place slices back on the cookie sheets. Bake at 325 F for 9 minutes then turn slices over and bake for 7-9 more minutes. Cool completely on wire racks before eating and store in a ziploc bag or airtight container.



The boys were very pleased with their afternoon snack and cartoons. They were also pretty good about patiently waiting for me to finish taking pictures before devouring everything.











Then the sugar high hit and they took turns posing.





And then it was time to cuddle on the couch.
