As the title implies, olive oil is a predominant flavor and comes from the homemade olive oil mayonnaise. You should probably be a fan of the taste before you make these biscuits, but you can always substitute safflower oil if your heart desires.

To me, these are the perfect side to a big bowl of soup…or eaten on their own for a totally yummy carb loaded breakfast.

Ingredients:
(makes 12 biscuits)

2 C all-purpose flour, sifted
1 TBS baking powder
1/2 tsp salt
1/2 tsp garlic powder
1 C shredded cheddar cheese
1 C whole milk
1/4 C homemade olive oil mayonnaise (recipe below)

2 TBS butter
1/2 tsp dried parsley flakes
1/2 tsp garlic salt

Preheat oven to 425F and grease two muffin tins.

In a large bowl mix together the flour, baking powder, salt, garlic powder, and cheese. Now add the milk and mayonnaise and stir until just combined. Spoon dough into tins and fill each muffin cup 2/3 full.

Bake for 12-15 minutes until lightly browned. Remove from tins and place on a cooling rack.

Melt butter in a small bowl and add the parsley and garlic salt. Use a pastry brush to baste a little butter mixture of top of each muffin. Serve immediately and store any leftovers in the fridge (they reheat very well).

Homemade Olive Oil Mayonnaise
(makes 1 cup)

1 whole egg
1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp sugar
2 tsp lemon juice
1 TBS white vinegar
1 C extra virgin olive oil

Whisk together egg, salt, mustard, and sugar then stir in lemon juice and vinegar. Start whisking briskly (by hand, food processor or Kitchen Aid), then start adding the oil a few drops at a time.

Once the liquid seems to thicken and lighten a bit, add a few more drops of oil. Whisk and continue this process until all of the oil is incorporated and you have a nice thick mayonnaise (though it will be a bit soupy until chilled a few hours).

This mayonnaise will keep in the fridge for about a week in an air tight container.
