If the flavor of these don’t hook you, the soft crumbly texture will. They’re like soft little nuggets of lemony heaven…rolled in coconut 🙂

Lemon Honey Balls

(Makes about 16 balls)

1 C almond flour
zest of 1 lemon
1/4 – 1/3 C honey (just enough to form a dough)
unsweetened dessicated coconut

Combine almond flour, lemon zest, and honey and roll into balls.

Toss balls one by one in the dessicated coconut and you’re in business. Make sure to store leftovers in the refrigerator (if you can keep from eating them all at once!).
