My second entry in the Saucy Mama contest. I wanted something easy, fun, and quick to make. I like the option of eating it wrapped in a warm tortilla or, for the carb-conscience, throw it in a romaine leaf for a fresh crunch that adds fewer curves to your hips.

I was really REALLY happy with how this turned out and surprised how much flavor there is from such a short time marinating. The meal itself came together amazingly quickly, the part that took forever was photographing it. Should I take a picture with the lettuce? With the tortilla? With sour cream or without? So a LOT of picture-taking ensued, followed by each photo subject being completely devoured.

Ingredients:
(Serves 4-6)

2 chicken breasts, sliced
1/2 C Saucy Mama Lime Chipotle Marinade
1/2 onion, sliced
1/2 green pepper, cut into strips
1 TBS vegetable oil

4 TBS sour cream
2 TBS Saucy Mama Hot Sauce

shredded cheddar cheese (this time I used a Mexican 4-cheese mix)
small flour tortillas or romaine lettuce leafs, white parts removed

Mix the marinade and chicken together and marinate for 30 minutes in the fridge. In a large skillet, saute the onion and peppers in oil. Once they start getting tender, push to one side of the pan and add the chicken (shake off excess marinade and discard).

Cook on one side for 2-3 minutes then flip and cook 3 more minutes. Stir everything together and spoon into tortillas or lettuce leafs. Mix together the sour cream and hot sauce and use to top the chicken wraps along with a little cheddar cheese.
